This has become a lunch time favorite for me! I’m not on TikTok, but I think a similar idea has been making the rounds with shredded chicken added. You could do the same for this, though, of course, it would no longer be vegan.

Salad Ingredients

  1. Cabbage (I use a whole cabbage)
  2. 1 Large Cucumber
  3. 1 Green Bell Pepper
  4. 4 green onions

Chop all your vegetables. I like to use those nifty little choppers you see these days, but if you are especially good at dicing, no reason you can’t do it that way!

Dressing Ingredients:

  1. Handful of Parsley
  2. Handful of Cilantro
  3. 1 tablespoon Olive Oil
  4. 1.5 Avocado
  5. 1 tablespoon Vegan Mayo (I love Hellman’s Plant Based Mayo)
  6. 2 Cloves of Garlic
  7. Juice of 1/2 Lemon
  8. Salt and Pepper to taste

Combine all of your dressing ingredients in a blender. Blend until very smooth.

Now pour the dressing over your chopped vegetables and mix. Couldn’t be easier!

I like to serve mine with tortilla chips. On this particular day, I also topped with vegan feta cheese by “Follow Your Heart.”
