Doesn’t it feel so good to not be scorching, fellow Appalachians? We took one of those cooler days this weekend for one of our favorites: Skyline Chili.
Now, I must confess. This is a recipe native to Ohio. My husband made it for the first time years ago, and it became a go to for us. It’s traditionally served over noodles, which obviously, can be done gluten free! I don’t respond well to gluten free noodles, so I use Tostitos Bite Size chips for this recipe. It makes it more like a dip, but I still love it!
A note on dairy free cheese. The cheese I use is available at our local Kroger. (For now, am I right?) It is the Simple Truth Dairy Free Cheddar Cheese. I used to use Daiya cheese for all of my recipes, but since the recipe change, I can no longer tolerate it. My instinct tells me the oat cream they are using is not certified gluten free, so there is a cross-contamination issue happening. That being said, I don’t know this for sure. I just wanted to be sure to let you know which vegan cheese is pictured.
Ingredients:
- 2 lbs ground beef
- 4 cups water
- 2 medium sweet onions
- 4 garlic cloves
- 1/4 cup chili powder
- 1 tbsp cocoa powder
- 1/2 tbsp cayenne pepper
- 1 tsp cinnamon
- 1 tsp cumin
- 1 tsp allspice
- 1/2 tsp ground cloves
- 3 Bay leaves
- 1 can tomato sauce (8oz)
- 1 can crushed tomatoes (14.5oz)
- 2 tbsp apple cider vinegar
- 1 tbsp coconut aminos
- Garnish: diced white onion and vegan cheddar cheese
Directions:
- In a Dutch oven, cover ground beef with 4 cups water and break up finely as it cooks. (About 30 minutes.) For a finer chili, you can use your immersion blender. This is optional, though!
- Add diced sweet onion and garlic to beef and stir.
- Add all of your spices, vinegar, and aminos and reduce liquid by boiling uncovered for 15-20 minutes.
- Add tomato sauce and crushed tomatoes and stir. Reduce heat to low and simmer about 1.5-2 hours.
- Serve over allergy friendly spaghetti or as a dip or hotdog chili. This has many uses!
- If you like, top with vegan cheddar and onions.
I hope you enjoy this savory option! My husband is the much better cook in this house, so this is his recipe. It’s a favorite for the family and his employees! It makes a nice amount for sharing, so this would also be a good option for a potluck.
