About Me
The short story is that I am a 36 year old wife and mom of 2 living in the Appalachian Mountains.
If I’m being completely honest, I’d say I’m starting this blog as a creative outlet. I figure, though, if a little bit of the knowledge I’ve picked up along the way helps someone, then it was a worthy use of my time.
I’ve been gluten and dairy free since I was 23 years old. After the birth of my daughter, it became clear that soy protein also had to go. After the birth of my son, eggs and most tree nuts were added to the list. As a lover of baking, I don’t have to tell you, this was all a blow.
I’m not one to take such things lying down, so I’ve spent loads of time trying to figure out how to cook and bake safely for my family and myself. My daughter is also gluten free. My son and husband currently live blissful lives filled with normal cinnamon buns and oreo cakesters.
I know how it feels to feel frustrated when it’s time to bake a birthday cake for a child with a food allergy or intolerance. I certainly know how it feels the day you realize dining out isn’t really an option anymore. A poor belly can only take so much. I wanted to make this a space to share my successes for others to use in their own homes.
I’m still on this journey, however, and I will also share my fails. For example, brownies and blondies elude me, even after years of effort. I’ll keep you updated on how it goes.
I was also diagnosed with Hashimoto’s and Hypothyroidism a year ago. Navigating life as a mom and wife with an autoimmune disease has been interesting. It’s forced me to slow down and learn some real deal self-care. I’ll share anything that helps me with the hope that it can help another.
I’ll likely share some of my favorite things like reading and crafts as well.
